After two cold and shy yield seasons in a row, Commander Zinskey is back in fighting form. Hiding out in a one half acre vineyard at the foothills of the Mayacamas in the refreshing ocean air of the Carneros, the Commander enjoyed near perfect conditioning weather with an incredibly long hang time for super taste and heroic structure.
Killer Ribs
A juicy Zin, like Commander Zinskey, needs a partner that packs a punch. Luscious, meltingly tender pork ribs with a zingy plum glaze is the perfect sidekick. Zinfandel is one of the few red grapes that can stand up to tangy and spicy foods. RSV does not make a dry red Zin every year, but when we do, I rejoice with ebullience in the kitchen. You can also use this glaze for grilled pork chops, game hens, or any preparation where finger licking is encouraged.
